What is that??!?! Velvet?

Now that i am fully recovered from Ursula (the cold that stole my voice for a week. Too bad there wasn’t a prince involved in helping me get it back) I figured I needed a sweet treat!

A couple weekends ago I went to visit my very good friends, The Lehman Family, at their beautiful home in Upstate New York. If you haven’t been upstate it is absolutely beautiful! Before i even got to the home I had received texts saying I wouldn’t be let in the house with out baked goods in hand. My hands are popular, what can I say? Little did they know that I had planned to use their state of the art kitchen to bake my big ol’ touchas off!

There is nothing better than a real kitchen equipped with every gadget imaginable! I made cookies, blondies, pancakes and more! That family didn’t know what hit them! Inspired by that weekend and my first time making blondies, I decided to make them again but this time with a Gay Gourmet!™ twist!

Yup folks you guessed it…RED VELVET! not only red velvet but also OREO STUFFED!! WHAT!?!?!?!? I guess I can’t call them blondies so how about Velveties?

This is where I stop the banter and just give you the recipe! So, without further adieu please welcome Velvety Stuffed! (aka Velveties!)

Her Wants…

3 sticks butter
3 cups red velvet cake mix
3 cups packed light brown sugar
4 eggs  room temperature
2 tsp madagascar vanilla (I’m bougie what can I say?)
1 pack Oreo® cookies

Line an 13×9  baking pan with parchment paper.  Butter or Pam® it and set aside.

Grab yo self a medium sauce pan and melt butter over medium heat.

Stir butter until it melts and foams.  Once the foam subsides the butter will be brown and become fragrant

Take it off the heat and carefully stir in sugar and vanilla.

Preheat oven to 350 F and place oven rack in the middle position.

While oven is preheating let butter and sugar cool to the touch.  Once the oven is preheated your batter should be ready for the eggs.  (You don’t want to add the eggs to a hot mixture as you’ll have scrambled eggs in your Velveties!)

In a separate bowl beat eggs and then slowly add them in parts incorporating each before adding the next.

Sprinkle Velvet mix over top an stir in with a spatula till incorporated!  Don’t over mix honeys!

Pour 1/4 the batter into your pan and cover with a single layer of Oreo® cookies then  pour the rest of batter over top of the cookies.

Spread the batter out to cover the cookies!

Place in the oven and bake for 40-45 minutes. It depends if you like them a little less baked or not!!

If you insert a tooth pick in the Velvetie (inbetween the cookie) it should come out with a few moist crumbs on it.

Pull them out just shy of being done as you don’t want to over bake them.

Let them come to room temp before I cut into them.

Store in an airtight container.  These are actually really too sweet by themselves but with some vanilla ice cream they are perfect!!!
